Pork Chop With Mango Salsa

4 pork loin chops, about 1 1/2 inches thick4 t Extra Virgin Olive oilSalt and Pepper2 C cooked brown riceFor Mango Salsa:1 ripe mango, peeled, pitted, and diced (about 1 cup)1/2 medium red onion, finely chopped1 Serrano chile, minced (include ribs and seeds for a hotter taste if desired)1/2 cup cucumber, peeled and diced2 tablespoons fresh cilantro leaves, chopped3 tablespoons fresh lime juiceKosher salt and pepper to taste
Combine all of the ingredients for the salsa in a bowl. Season to taste with salt and pepper. Refrigerate at least 30 minutes before serving.
Rub olive oil on both sides of each pork chop. Sprinkle with salt and pepper. Grill over medium heat 5 to 7 minutes per side or until desired doneness. Serve over rice and top with mango salsa. Garnish with a sprig of mint.
