Mostly Egg White Veggie Omelet With Cheese

Ingredients
1 large egg3 large egg whites1 small red onion diced1 plum tomato diced1 cup spinach choppedOlive oil spray1 ounce grated mozzarela1/2 ounce parmesan grated/shreddedsea saltpepper millItalian seasoningsSrirachi hot sauce (condiment)
Directions
1) Wash and chop your veggies. Saute in non-stick pan with light spraying of olive oil. Add salt & pepper as desired. Set aside.

2) Crack 4 eggs into a bowl. Scoop out 3 of the yolks. Beat the eggs to fluff them up a bit. (optional: add 1 tbsp of milk for more fluffy omelet) I also add a dash of sea salt, freshly cracked pepper and some dried Italian herbs to the eggs before beating.

3) lightly cover the non-stick pan with olive oil spray. Add beaten egg mixture. Cook under medium heat until the eggs are set. Add grated cheeses to one side and fold omelet over it.

4) Plate omelet onto dish. Cover with sauted veggies.

5) Enjoy with Srirachi hot sauce.
