Elaine's Simple Ceaser Salad

Ceaser Dressing : Light mayo, 3 tbspMustard, 4 tbsp3 cloves garlic, finely chopped.Salad : Romaine or Butterhead about one small head, lettuce, roughly teared.Croutons : Day old whole wheat bread, sliced into small squares, drizzled with olive oil and bakes till golden brown.
Finely chop garlic, mix with mayo and mustard. Set aside in fridge for flavours to develop.
Meanwhile, dice bread into crouton size. Sprinkle with olive oil and bake until it becomes golden brown, it has to be golden brown otherwise it won't be crispy.
Roughly tear lettuce leaves to bite sized bits.
When croutons are done, toss lettuce with dressing, and top with croutons.
