Rich low fat low sugar chocolate muffins

Ingredients
1 c old fashioned oats1 c 2% milk1/4 c non fat yogurt1 tsp vanilla extract1 egg2 tbsp espresso coffee3/4 c flour1/3 c cocoa1/2 to 1 c splenda - to taste1/2 tsp salt1 tsp baking soda2 tsp baking powder1/2 c cocolate chips12 chopped and toasted almonds
Directions
soak oats w milk for 1 hour (or more)
combine yogurt with baking soda for at least 5 minutes
add vanilla,egg and cold espresso coffee Or 1 tbsp instant espresso granules
In seperate bowl combine baking powder, salt, flour, splenda, cocoa and chips mix well then add to wet ingredients (do not overmix or your muffins will be tough). Fill pam coated muffin tin sprinkle toasted almonds on top.
Bake in 400 degree pre heated oven 15 minutes.
