Cauliflower Cream Sauce

Ingredients
3 cloves garlicfew T olive oil1 large head of cauliflower, cored and chopped into large chunks1/2 t of a herb you like -- thyme or basil -- or an Italian herb blend1/2 t red pepper flakes, (if you like)salt and pepper to taste
Directions
Heat the oil in a pan and warm the garlic cloves -- don't brown them -- then add the cauliflower, herbs, red pepper flakes, and salt and black pepper. Add enough water just to cover and simmer until the cauliflower is soft.
At this point, put the mixture into a food processor and blend until smooth. Add water as you go, depending on the thickness you want. Works well on noodles.
If you don't tell your kids this was cauliflower, they'll never know!
