Buckwheat-Oat Waffles (Gluten Free)

Ingredients
2 1/4 cups water1/2 cup buckwheat flour1 1/2 cup gluten free oatmeal1/4 cup soy flour1/2 tsp salt1 tbsp olive oil
Directions
Combine ingredients in blender and blend until light and foamy. Let stand while waffle iron is heating. The batter thickens on standing. Blend briefly. Bake on hot waffle iron 8 - 10 minutes. Do not raise lid until timer sounds. Allow more time if necessary to brown.

Top with fresh fruit.

Serving Size: Makes seven 3 1/2 by 6 inch waffles.
