Wild Rice-Quinoa Pilaf

Ingredients
1 Tbl. olive oil1/3 c. finely chopped onion1/3 c. finely chopped celery1/4 c. chopped almonds1 c. quinoa, rinsed and drained3 c. chicken or veg stock1 c. cooked wild rice
Directions
Heat oil. Saute onion and celery 5-6 min (until begin to soften). Stir in nuts & quinoa and cook for 1-2 minutes. Add broth, reduce heat to low, cover, and simmer for 18-20 min. Stir in the rice and cook 2-3 min to warm. Taste for seasoning.
