Ingredients
all beans are pre-soaked and boiled2c black beans3c pinto beans2c red kidney beans1c diced onion1c diced tomato1 tbsp cumin seed3 tbsp chili powder4 cups of water
Directions
in the bottom of a large, dry, heavy pot heat cumin seed with chili powder and any other chili spices you like on medium heat, until they start to give off a smoky smell. Add 1 cup of water and onions. Steam fry the onions until soft. Add the beans and tomatoes and remaining water, more if necessary. When the water comes to a boil, turn heat to low and simmer for 45 minutes, or until it's the consistency you like. I like my chili just between soupy and thick. Serve with a slice of vegan cornbread from fat-free vegan.com. Yum!
