creamy potato soup w/ ham

10 med/large potatoes peeled, sliced & quartered1/2 med. white onion peeled & minced1 stalk celery, minced2 cans (12 oz.) evaporated milk2 cans (10 3/4 oz.) cream of onion soup2 cans (10.5 oz.) cream of celery soup2 cups water (reserved from potatoes)1 tsp. minced garlic or garlic powder1/2 tsp. parsley1 tbsp. pepper1 pkg. (8oz.) diced hamshredded cheddar cheese
Peel and rinse potatoes. Slice and cut into quarters. Place in large sauce pan or dutch oven. Mince onion and celery and add to potatoes. Add enough water to cover tops of potatoes. Bring to a boil. Continue boiling until potatoes are tender. Drain, reserving 2 cups water. Pull out 2 cups of potatoes and mash well. Set aside. In same pan combine milk and soups. Mix well on low heat. Add mashed potatoes set aside earlier. Slowly stir in remaining potatoes. Add ham and seasonings. Return to a boil on low heat. Boil for 1 minute. Top with shredded cheddar cheese and serve. Refridgerate any leftovers. Makes approx. 15 - 1 cup servings.
