Yellow rice

Ingredients
Onions, raw, 1 small (remove)Peppers, sweet, red, raw, sliced, .25 cup (remove)Yellow Peppers (bell peppers), .5 pepper, large (3-3/4" long, 3" dia) (remove)*4 smoked haddock fillets (500g pk) - as sold, 150 gram (remove)*Garlic (clove), 1 serving (remove)*Peas Birds Eye frozen garden peas, 100 gram(s) (remove)Mushrooms, fresh, .5 cup, pieces or slices (remove)*Stock cube Organic Vegetable -Kallo per cube, 1 serving (remove)Chicken Breast, no skin, 1 breast, bone and skin removed (remove)White Rice, long grain, 200 grams (remove)*Ground tumeric, .5 tbsp (remove)
Directions

fry chopped onion in frylite until soft, add garlic, chopped peppers and mushrooms and chicken. fry for 2 mins. Add rice, tumeric and stock cube made up with 500mls of water. cover and simmer until rice almost cooked - add haddock (cut into cubes). cntinue cooking until fish is cooked. serve garnished with lemon or orange slices.
