Pumpkin Bread (Healthy: 40/30/30)

Ingredients
2 cup flour, 1 cup soy powder,4 eggs,3/4 cup sweetned applesauce, 1/4 cup oil, 2 cup pumpkin, 1 1/2 cup Splenda, 1tsp cinnamon, 1 1/2 tsp salt, 1 tsp nutmeg, 1/2 tsp allspice, 2 tsp baking soda, 2/3 cup water (optional 1 cup nuts chopped and/or raisins).
Directions
Cream sugar, eggs, and oil.
Add pumpkin and mix.
Alter dry ingredients along with water mixing until all mixed well.
Bake @ 350 degrees
In tube pan ( angel food cake pan) 90 minutes
In (3) loaf pans 75 minutes

Makes 16 servings
