Wilted Spinach with Pine Nuts & Broccoli

1 Tbsp olive oil1 medium onion, quartered & sliced1 jar (1.75 oz) pine nuts3 cloves garlic, minced1 bunch broccoli, stems removed, chopped1 cup cherry tomatoes, halved1 bag (10 oz) fresh spinach, chopped1/2 can (8 oz) black olives, sliced1 Tbsp fresh parsley, chopped5 leaves fresh basil, chopped2 Tbsp balsamic vinegar1 fl oz white wine3 oz feta cheese, crumbled1/2 tsp crushed red pepperfreshly ground black pepper to tastesalt to tasteolive oil cooking spray
Spray nonstick pan with olive oil cooking spray, add olive oil & heat to medium high. Add onion & pine nuts, cook until onion is tender, add garlic, stir until onion is slightly carmelized. Add broccoli and cook until tender. Add remaining ingredients except feta cheese, stir until spinach is wilted, remove from heat and stir in feta cheese.
