*Almond Milk SILK Pure Unsweetened, 1.5 cup *Coconut Milk - Thai Kitchen, 1.5 cup Vanilla Extract, 2 tsp Egg, fresh, 2 large Egg Yolk, 3 large *Liquid Stevia, 4 serving or to taste
Combine the milk and cream (canned coconut milk) in a saucepan. Bring the mixture to a slow boil over med heat. Reduce to low.
Combine eggs, egg yolk in a medium bowl. Use a hand mixer on medium til smooth about two minutes. pour one cup of the hot mixture to the egg mixture very slowly as you stir. Then pour the egg mixture into the hot mixture, stirring constantly. Over medium low heat until mixture coats the back of the spoon. Transfer to bowl and cover with a sheet of plastic wrap directly on custard. Chill completely. make according to ice cream machine.
