Cheesy Broccoli Potato Soup

Ingredients
Butter, unsalted, 1 tbspWhole Wheat Flour, 1 tbspSkim milk, 2 cupsVegetable bouillon - 2 cubes, Water, 1 cupBroccoli, 1 cup choppedRed Potato, 1 medium, dicedPeas, frozen, 0.5 cupGarlic, 1 tspOnion powder, 1 tbspLow-fat shredded cheese, 0.5 cup
Directions
Melt butter in medium-sized pot. Whisk in flour to create a roux. Slowly add milk, continuing to whisk, and then water and bouillon. Blend broccoli in food processor (and if it doesn't blend well, add some of the liquid from the pot). Add broccoli to the pot, as well as all other ingredients except the cheese, and let simmer for about 10 minutes or until potatoes are soft. Let soup cool to below boiling to avoid curdling, then slowly melt in the cheese.

You could also try adding other vegetables like onions, carrots, etc. -- either blended with the broccoli or thrown in later with the potatoes.
