First Try Tofu Chili

Ingredients
I onion chopped2 Jalapeno Peppers chopped 4 closves garlic mincedSaute above ingredients in1 tbsp Extra Virgin Olive Oil, Tofu, firm, 1 block (drained and crumbled)1 cup Tomato Sauce1 large can tomatoes, crushed1 Tablespoon cumin2 Bay Leaf1 Tablespoon Coriander seed2 cup Beef Broth, 1 can red kidney beans1 teaspoon Oregano
Directions
After sauteeing the onion, peppers and garlic add the remaining ingredients. Simmer covered on low for one hour.

For truly vegetarian you can substitute water for the beef broth.
