Portobello Mushroom Bake

Ingredients
3 large Portabella mushroom caps1 cup roasted red pepper pieces2 tbsp olive oil2 cups instant brown rice1 cup black beans3 oz shredded mozzarella, part skimGarlic to taste
Directions
Brown peppers in oil and garlic until soft.
Add mushroom caps and heat through.
Boil rice per instructions.
Mix black beans with rice in a casserole dish, add whole mushroom caps, top with roasted red peppers
and mozzarella cheese.
Bake at 350 for 20 minutes or until cheese is bubbly.

    My husband loves mushrooms so this recipe was a good choice to try! It was simple, fast and included my favorite - Black Beans! With two of us at home now, the four servings was great. We had some left overs for another meal. The only thing I would change is to add some onions next time. - 8/19/09

    I used Pinto Beans rather than black beans the second time I made it, and used a mix of brown and wild rice. It definitely gave it more flavor- but it's still yummy as is! - 11/13/08
