Lite Cheescake

Ingredients
4 cups fat free cottage cheese3/4 cup sugar1 1/4 cup splenda1 (8 ounce) fat free cream cheese1 (8 ounce) 1/3 less fat cream cheese (or neufandel)1/4 cup flour1/2 cup fat free sour cream1 tbsp vanilla extract1/4 tsp salt3 eggs1/2 cup egg substitute (the equivalent of 2 eggs)2 reduced fat graham cracker pie crusts (9" shells)
Directions
Preheat oven to 325.

Strain cottage cheese. You can do this with a cheese cloth or you can do it by hand with a drainer by straining it and spooning off excess liquid. (I've done both methods and both work).

Put strained cheese in a food processor and blend until smooth. Add flour, sour cream, and remaining ingredients (except pie crusts). Mix until blended. Pour into TWO 9" graham cracker crusts. Bake at 325 degrees. for one hour. Turn off oven and leave in the oven for 1 hour to cool. Remove from the oven and cool until the pies reach room temperature. Refrigerate overnight.

SUBSTITUTIONS: if you don't care about cholesterol you can use 5 eggs total and forgo the egg substitute.

Makes two pies, 10 servings each.
