yummy large veggie fritter

Cauliflower, raw, 1 head, medium (5-6" dia) Spinach, fresh, 5 cup Egg white, 5 serving Garlic, 2 tsp Baking Powder, 1 tsp Paprika, .5 tsp *Summer Squash, 1 cup, sliced *Heart Smart Bisquick , 0.1 cup
Take cauliflower and steam/boil till soft enough to mashup with a fork.
once soft put in a large bowl and mash up.
then take spinach garlic, and summer squash and dice
in the bowl with cauliflower mix, add in the egg, bisquick, veggies, baking power and spices, if you want hot sauce too
till it seems everything is mixed equally
heat pan on stove to medium high heat
heavily spray pan with pam, drop in heaping spoonful of mix, let cook for about 4-6 minutes then flip once golden brown.
let cool on a paper towel covered plate,
then add salt pepper, or what ever else, sour cream maybe, and enjoy
