Oatmeal Pancake Mix

4 cups old fashioned oats2 cups all purpose flour2cups whole wheat flour1 cup brown sugar1cup instant nonfat dry milk3 T Baking Powder2 T Cinnamon5 t Salt1/2 t cream of tartareggsapplesaucepumpkinflax seedwheat germ
Mix all dry ingredients together. Store
in a gallon size bag or air tight container.
I add 2 T of Flax seed and 2 T wheat germ to mixture - not included in nutritional info.
To make pancakes: Beat 2 eggs in a large bowl. Gradually beat in 1/3 cup applesauce and / or pumpkin. Alternately add 2 cups Pancake Mix and1cup water to mixture.Blend well.
Pour 1/3 cup batter per pancake onto griddle.
Makes 8 pancakes.
Serving Size: Makes 9 cups of Mix
