Ingredients
5 oz Salmon Filet, grilled1/4 cup Red Onion, raw, diced1/4 cup Red Bell Peppers, raw, sliced small1/4 cup Jicama, raw, julienne1/4 cup Carrots, raw, shredded3 cups Organic Baby Spring Greens, washed, trimmedTrader Joe's Cilantro Salad Dressing, 2 tbsp (on the side)
Directions
Season the salmon according to your own tastes (I prefer them skinless). If you drizzle with olive oil, account for the calories, etc. If not, spray each side of the filet with a small amount of olive oil.

Place the salmon fillets on the hottest part of the grill for about 5 to 10 minutes on each side, or until desired doneness. Do not overcook, salmon should be pink in center.

While filet is cooking prepare vegetables. Arrange veggies on a plate; place piping hot salmon on top of the veggies. Serve salad dressing on the side.
