Diet Cherry Chocolate Cupcakes

Ingredients
2 cups flour1 cup sugar1/2 tsp baking soda1/2 tsp baking powder1/2 tsp salt1 tsp vanilla extract1/4 tsp almond extract1 package (39 gm) Fat Free, Sugar Free Instant Pudding Mix - Chocolate Fudge flavor1/3 cup unsweetened cocoa powder120z can Diet Cherry Cola (I used Diet Rite Cherry Flavor)
Directions
Preheat oven to 350 degrees. Prepare muffin tins with paper liners or baking spray.

Mix all dry ingredients well in large bowl
Slowly pour contents of soda can into the dry ingredients, mixing well.
Add vanilla and almond extracts.

Pour or spoon batter into muffin tins and bake for 15 minutes or until toothpick comes out clean

(Because of the pudding mix, your cupcakes may rise more like muffins. I made 18 fairly large cupcakes out of this batter. You can spread it to 24 for 82 calories/ 2P+ each.)

Creator's Note:
I used 1 cup of all purpose flour and 1 cup of self-rising flour to make the cupcakes less dense. That also attributed to the muffin-like shape.
