Pears Poached in Coffee

Ingredients
4 whole bosc pears, whole1 cup strong coffee, left-over from breakfast0.5 cup sugar1 tsp vanilla extract
Directions
Combine coffee and sugar in a sauce pan. Bring to a low boil. Add pears. Poach on low for 20-25 minutes. Remove pears. Reduce sauce a little. Add vanilla extract. Spoon sauce over pears. Chill before serving

Serving suggestions (not included in calorie count):
- with a small piece of sponge cake or angel food cake
-with whipped topping
