Banana peppers stuffed with sausage

4 Banana or Cubanella Pepper8 oz. ground extra lean pork0.5 tsp. salt0.5 tsp. pepper1 tsp. ground fennel
Mix the salt, pepper and fennel with the ground pork.
Cut the tops off the peppers, remove seeds and stuff with pork.
Place in a shallow baking dish, add a little water, cover and bake at 350 for approx. 60 minutes.
We usually have this lite pepper/pork recipe with sliced potato's that were cooked in olive oil on the stove top until brown.
Serving Size: makes 4 peppers or 2 servings
