Six Week Muffins (Raisin Bran Muffins)

Ingredients
1 - 15 (or 20) oz box of Raisin Bran Cereal 1 Cup Natural (Unsweetened) Applesauce3 Cups Sugar4 Eggs, Beaten1 QT Low-Fat Buttermilk5 Cups Flour5 tsp. Baking Soda2 tsp. Salt1 - 2 Tbsp Orange Zest
Directions
In very large bowl: Mix sugar, flour, baking soda, and salt together well. Stir in raisin bran. Add beaten eggs, applesauce, and buttermilk. Mix Well.

Fill papered (or greased) muffin tins 2/3 full. Bake at 400 for 12-15 min.

*Batter will keep in covered container for up to 6 weeks. To use, do not re-stir, but bake or freeze.
