Rainbow Vegetables and Rice

Ingredients
1/4 cup of brown rice (I used Trader Joe's Brown Rice Medley)1 tsp. Olive Oil1/4 cup onion diced1 tsp of garlic minced1/4 cup carrot diced small1/4 cup bell pepper diced1 small summer squash diced1 small zucchini diced 1 tsp. of lemon juice or to taste1 cup of fresh spinachDashes of the following:Black PepperOreganoParsleyNote: The lemon add a nice zesty zip to the meal.
Directions
Cook Rice according to directions - for extra flavor cook in vegetable or chicken broth

Meanwhile
In a skillet, add olive oil, garlic and onion, saute until tender (3 minutes), Add the carrots and saute until soft (3 minutes). Add the rest of vegetables, except for the spinach. Add lemon juice . Cook until tender (about 3 minutes). Add Pepper and seasonings to taste. Top with spinach and cook until wilted (about 1 minute).

Then add your cooked rice.

makes approx. 2 1/2 cups total - Good for one single meal or two side dishes
