Sicilian Chicken

Ingredients
2-4 boneless skinless chicken breasts4 oz part-skim ricotta cheese4 oz mozzarella cheese, shredded1 tbls fresh minced garlicone small red onion, diced1 tbls extra virgin olive oiljar of your favorite Spaghetti sauce
Directions
Flatten chicken breasts til thin enough to roll.
Please all other ingredients except sauce in small bowl and blend.
Place 1/4 of the mixture on the chicken breast and roll up - secure with bamboo skewer.
Top with your sauce.
Bake 30-35 minutes at 350 degrees.
