Breakfast Quesadilla

Ingredients
2 white corn tortillas1 egg2 egg whites3 small slices of avocado2 tbsp shredded cheddar cheesesalsabutter flavored nonstick cooking spray
Directions
1. wisk together egg whites and whole egg and scramble.
2. Heat additional skillet (or wipe out skillet used to scramble eggs) over medium high heat and spray with olive oil spray.
2. spread eggs evenly over 1 tortilla, top with avocado, and cheddar cheese.
3. Top with second tortilla. Spray 1 side with cooking spray and put in pan. Cook until tortilla is browned. Spray other side, flip and continue.
4. Remove from pan and allow to sit for a few minutes. Cut into triangles.
