Introduction

These burritos can be made ahead of time, individually frozen, then heated for a fast meal. These burritos can be made ahead of time, individually frozen, then heated for a fast meal.
Number of Servings: 12

Ingredients

    1 tbsp olive oil
    1 cup onion, chopped
    4 cloves garlic, minced
    6 cups black beans, drained
    2 cups water
    3 tbsp chili powder
    2 tsp ground cumin
    2 tsp yellow mustard
    1/4 tsp cayenne pepper
    3 tbsp low sodium soy sauce
    4 cups cooked and mashed sweet potato
    12 (10 inch) Low Carb Whole Wheat Burritos

Directions

1) Preheat oven to 350 degrees F.
2)Heat oil in a skillet and saute onion and garlic until soft. Stir in black beans and water, and heat until warm. Remove from heat and drain reserving 1/2c liquid.
3)Stir in chili powder, cumin, mustard, cayenne, soy sauce and reserved liquid in a small bowl. Add to bean mixture.
4)Divide mashed sweet potatoes and bean mixture evenly between the warm tortillas. Top with cheese. Fold up into burritos.
4)Bake in the oven for 12 minutes and serve.

    Not to nit-pick, but the ingredients call for 12 BURRITOS, this should read "tortillas". When I make these, I'll leave out the mustard. Also, nutritional info should be adjusted for cheese, and quantity. Love sweet potatoes, great idea for how to use 'em! - 12/23/08

    Shoulds like a yummy recipe idea! But, you mention putting cheese on the burrito before folding it. But there is no cheese in the recipe ingredients. Does this mean the nutritional info needs adjusting? Can you make the adjustments? - 12/13/08

    Excellent! First time I made these, I halved the recipe in case I didn't like it. The spices that are used in the beans taste so good. I'm going to make this again soon. They are great for packing in my lunch. - 3/26/07

    Very tasty - especially the spices that go in the black beans. I just need to figure out a way to make a low-cal, low-fat sauce. I might sprinkle a little 2% cheese on it too - calls for cheese in the instructions but not in the ingredient list. Definitely making again though! - 12/3/07
