Introduction

Ingredients

    2 c cooked brown rice
    1/2 c red onion, diced fine
    4 garlic cloves, grated
    1/2 t cumin seed
    1/4 t red pepper flakes
    15 oz black beans, drained and rinsed
    14 oz diced tomatoes, fire roasted or low sodium
    1 T cilantro, chopped

Directions

Cook rice according to package directions (omitting salt and oil). Place a saute pan over moderate heat. Spray with nonstick cooking spray. Cook red onion and garlic for about three or four minutes. Add spices and cook until they become fragrant. Add beans and tomatoes. Cook an additional 20 minutes, stirring occasionally. Once rice is cooked, add to vegetables. Stir, serve and garnish with chopped fresh cilantro.

    folks, the point is the beans and rice are a complete protein. don't need chicken and cheese. add a salad instead. - 1/15/12

    I have this made ready for supper time.
    I cook brown rice and when it is cold put it in the freezer. That way it is ready to use other times to make this a quick meal and to reduce costs of the frozen rice packages. Just make your own Pat in Maine.

    This was really good! Did use salsa for part of the tomatoes so didn't add more onion but this is a great start to a burrito in a bowl! We also added a can of corn--colorful AND good tasting! - 10/1/10

    This was delish! As for the serving sizes ewils1, divide the finished meal into four equal servings. This recipe makes 4 servings and the calorie content per 1 serving is listed. Then you will also be able to see what size the servings are once divided. - 11/29/10

    I have made black beans and rice for years but have never added cumin and cilantro. I will try it. I also like the suggestion of trying it with quinoa. That would add more protein. - 11/15/10
