1/2 cup coconut oil1 cup powdered sugar5-6 tablespoons unsweetened cocoa powder2 tablespoons coconut milk1 teaspoon pure vanilla extractPinch of sea saltGood-tasting pure stevia extract, to tasteOptional addition for a glossy finish:1 fresh organic egg yolk
Cream the coconut oil and sugar in a small bowl until smooth. Slowly blend in the cocoa powder (unless you want to redecorate your kitchen), vanilla, and sea salt. Beat in the coconut milk and egg yolk, if using. Add stevia, starting with 1/16 teaspoon. You'll probably use less than 1/4 teaspoon. Just keep tasting and adjust sweetness to your liking.
note: coconut oil is solid under 75 degrees, and liquid otherwise. around 73-74 degrees, it's nice and soft, and perfect for this. if it's really cold out, you'll need to heat it up SLOWLY so it softens, but doesn't melt.
