easy curried chicken

Ingredients
500 grams skinless chicken1 cup peas2 cups white ricechicken stockdiced 1 onion1 tbs curry powdermint leavesoil
Directions
Brown chicken off in tbs oil,remove from pan and set aside.
Cook onion in pan,add more oil if need be. Add curry to the onions, then add rice to the pan, mix all together soaking up the oil. Place the rice mixture in a casserole dish, put the chicken on top of the rice. Pour over the chicken stock, cover with lid and cook for 30 minutes, add the peas and mint for the ;last 10 minutes of cooking. Serve with greek yoghurt if you like.
