4 c. zucchini, sliced2 1/2 c. cottage cheese1/2 c. Parmesan cheese 2 eggs3 c. fresh spinach2 t. diced garlic1/2 c. salsa or canned diced tomatoesitalian seasoningpeppergarlic powder
layer 1/2 the zucchini on bottom of dish
in separate bowl combine all other ingredients as cheese filling. pour over zucchini. layer the rest of the zucchini over cheese filling. top with fresh spinach, sprinkle with extra seasoning and parmesan.
cover and bake at 350 until tender.
