Cucumber Salad

Ingredients
1 Medium Cucumber- Peeled & chopped (remove seeds if desired)1/4 Cup shredded carrots1/4 Cup Red Wine Vinegar1.5 Tbsp Extra Virgin Olive Oil1/2 Cup Red Cabbage1 tsp Italian Seasoning1 tsp Black pepper1/8 tsp of Sea Saltred onion-sliced (optional)
Directions
Toss all ingredients together except red cabbage. Refrigerate until ready to serve. Layer each salad plate/bowl with some shredded red cabbage. Makes 2--1/2 cup servings
