1 Jennie-O Smoked Turkey Sausage7 large potatoes, washed and peeled1 can diced tomatoes1 large onion, cut in small chunks but not diced5 tbs. paprika (use the good stuff!)Salt to tasteWater to cover
Clean and peel the potatoes. Cut them in large, course chunks. Cut the sausage on a diagonal kind of thin, but not too thin. Sautee chopped onion in 1 tbs. olive oil just until lightly brown, in a large pot. Put the potatoes, sausage, and can of tomatoes in the large pot with the onions. Add paprika and salt. Add water just until covered. Bring to a low boil. Reduce heat to a simmer and cover. Stirring occasionally, cook for about an hour and 15 minutes. To thicken the "stew" if you like, remove the lid and slowly boil off some of the liquid until as thick as you like. Serve immediately. Really yummy with a bit of Fat Free Sour Cream mixed in, however calculations are based without adding any. Enjoy!

I've made this a few times now. Very good, hearty supper. Added a couple spicy peppers to give it some kick. I recommend shaking the pot rather than stirring, I think it gives a better texture. I've had good results in the crockpot on low for 5hrs, just don't add the sausage until the last 20min. - 10/25/11
