White Chicken Enchiladas

Ingredients
Black beansChicken breast, dicedPepper Jack cheeseGreen chilisCarrots, celery and onions (not on list)Laughing Cow Lite creamy swiss cheeseWhole Wheat TortillasSliced Black olivesMild Green Chili Sauce
Directions
Saute carrots, onions and celery in 1 tsp. olive oil till soft. Mix together with all other ingredients, except sauce, olives and 4 oz. of cheese. Divide filling evenly and fill in 4 tortillas. Put in oven safe dish, cover with enchilada sauce, cheese and olives. Bake at 350 for 30 minutes.
