Lisa's Roasted Tomato Salsa

12 Roma Tomatoes (plum)4 Cloves Garlic, unpeeled1 sm Onion, quartered2 Serrano pepper3 tbsp Olive Oil1 tsp Cumin1 1/4 tsp Salt4 tbsp (1/4 cup) Fresh Cilantro, chopped1 tsp Chili Powder
Preheat broiler: In 9x13 baking dish, place tomatoes, peppers, onion wedges, and garlic cloves. Drizzle with olive oil. Broil for 5-10 minutes (checking often), or until outsides of veggies are charred. Turn veggies over and repeat. Remove veggies from heat and let cool. Remove and discard tomato cores, garlic skins and pepper stems.
In a food processor, coarsely chop the charred veggies (add remaining juices from the baking dish too). Transfer to med bowl and mix remaining ingredients.
