Pancakes with Strawberry Sauce

2 whole eggs1 1/3 c. gluten-free flour2 c. 1% milk2 c. strawberries, sliced2 2/3 tsp. olive oil3 tsp. strawberry extract, divided2 tbsp. water
In a small bowl, combine eggs, gluten-free flour, milk, and 2 tsp. of strawberry extract to form a thin batter. Heat 2/3 tsp. oil in a nonstick saute' pan. Pour batter into pan to make small (two-inch) pancakes. Batter will make 24 silver dollar-sized pancakes. The pancakes will cook to a golden brown color and will resemble buckwheat in color and flavor. As pancakes are cooked, place on two serving plates and keep warm. Repeat process untill all the batter is used. When you have finished making all the pancakes, add sliced strawberries, water, and 1/2 tsp extract to saute' pan. Lightly heat strawberries until they are warm. Place strawberry mixture on top of pancakes on both plates and serve.
