Cranberry Muffins

Ingredients
1 cup Silk2 T oil2 T unsweetened applesauce1 t vanilla (or other extract)1/2 cup Splenda2 cups flour3 t baking powder1/2 t salt3/4 cup fresh or frozen cranberries, chopped
Directions
Mix wet and dry separately, stir together until just blended. Batter will be lumpy. Fold in cranberries. Spoon into 12 silicone muffins cups (or spray the other kind). Bake 20 minutes at 400 degrees.
