Mexican Black Bean Stew

Ingredients
8 oz. diced chicken breast1 c. black beans1/2 c. diced onion3/4 c. diced zucchini1 c. tomato sauce1/2 c. salsa2 2/3 tsp. olive oil, divided2/3 c. watersalt and pepper to taste2 tbsp chopped parsley
Directions
In saucepan, heat beans, onion, and zucchini in 2 tsp. oil until tender, then add tomato sauce, water, parsley, and salsa. Continue cooking until entire mixture is hot. While the vegetables are cooking, in a saute' pan heat 2/3 tsp. oil and stir-fry chicken until cooked. Add chicken to vegetables and simmer for 5 minutes. Place an equal amount in two soup bowls and serve.
