Flourless Oatmeal and Coconut Cookies

Ingredients
3 large eggs, beaten well2 cups sugar2 Tablespoons butter (unsalted)2 cups uncooked quick oatmeal1 cup flaked coconut, unsweetened or sweetened3/4 teaspoon vanilla extractpinch of salt
Directions
Pre-heat oven to 350 F
In a small bowl, beat eggs, set aside
In a large bowl, cream together sugar and butter

Add all other ingredients to sugar-butter mixture and mix thoroughly by hand

Place 1/2 teaspoons (rounded) of batter 1 inch apart onto aluminum foil on a baking sheet; 1/2 tsp is not a lot, don't put more.

Bake approximately 10-15 minutes at 350 degrees F until cookies are light golden in color.

Check after 8 minutes, rotate cookie sheet, then check every 2 minutes.

Let cool completely. When cool, gently peel cookies from foil.

Makes about 48 cookies
