Puff Pastry with Pesto & Tomatoes

Puff Pastry, 1 sheet10 Large Basil Leaves, chopped fine2 tbsp Pine Nuts, chopped fine2 tbsp Extra Virgin Olive Oil2-3 Large Garlic Cloves, chopped fine2 tbsp Parmesan Cheese, shreddedCracked PepperKosher Salt
Cut Puff Pastry into 4 pieces. Score the edge (about 1/2-1 inch inside border) with a sharp knife.
In a small bowl, mix basil, pine nuts, extra virgin olive oil, garlic, 2 tbsp Parmesan cheese, salt and pepper to taste.
Spread mixture inside the scored border of the puff pastry squares.
Cut cherry tomatoes into quarters and place on top of the basil mixture. Sprinkle remaining Parmesan cheese on top of the tomatoes of each square.
Brush edges of puff pastries with 1 beaten egg.
Cook at 400 degrees for 10-15 minutes, until puff pastry has risen and is golden brown.
