Crust:2 T Olive oil1/2 onion, thinly sliced1 1/2 cups thinly sliced mushroom caps1 cup (packed) chopped baby spinach leaves1/2 tsp salt1/8 tsp black pepper2 T yellow cornmeal2 T waterFilling:6 eggs1/2 cup fat free half and half1/4 tsp saltdash black pepper6 oz extra sharp cheddar cheese, shredded3/4 cup (3 oz) diced ham
Heat olive oil in skillet. Add onion and saute until it begins to brown. Add mushrooms and stir and cook until they begin to brown. Add spinach, salt , and pepper, an cook a few minutes. Add cornmeal and water and stir well. Lightly coat a 9" pie plate with cooking spray. Press mixture over bottom and partway up the sides of pie plate. Set aside. Beat eggs, half and half, salt and pepper together thoroughly. Fold in cheese and ham. Pour filling into crust and bake at 350 degrees for 40 minutes. Allow to stand at least 10 minutes before serving.
