Beefalo Veggie Chili

Ingredients
1 pound ground beefalo1 cup chopped onion1 cup dried black beans (or 2 cans)1 cup dried pinto beans (or 2 cans)2 cans diced tomatoes with green chilies1 cup carrots chopped1 cup spinach1.5 cups frozen butternut squash cubes (or fresh)2 tbsp chili powder1 tbsp cumin1 tbsp sea salt1 tbsp pepper
Directions
Brown beefalo with onion, drain fat then add other ingredients. You can cook this all day in the crock pot, or simmer on top of the stove for a couple of hours if you don't want to wait that long. Adjust the spices to your liking. The amounts shown are just right for folks who like it fairly hot, but a bit much for your wussier chili fans like me.
