Applesauce Oatmeal muffins Gluten Free

Ingredients
1 cups of old fashioned rolled oats (not instant)1 cups of 1% milk1 cups of Soy Flour1/4 cup of agave1/4 tbsp of molasses1/2 cup of unsweetened applesauce2 egg whites1 tsp baking powder1/2 tsp baking soda1 tsp cinnamon1/2 tsp of salt1 tsp xantham gum
Directions
Soak the oats in milk for about an hour.
preheat the oven to 400 degrees.
Spray muffin pan with cooking spray
Combine the oat mixture with the applesauce, agave, molasses and egg whites.
In a separete bowl measure and whisk the dry ingredients together.
Add wet ingedients to dry ingedients and mix until just combined.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Bake for 20-25 minutes or until done.
These can be frozen and reheated in the microwave for a quick breakfast or treat.
