Tabouleh Salad

Ingredients
3/4 cups wheat bulgur3/4 cups quinoa4 cups hot water2 tblsp salt2 bunches of parsley3 roma tomatoes diced2 to 3 tbsp fresh mint leaves chopped1 large cucumber diced3 green onions chopped1 tsp garliczest of 1 lemonjuice of 3 lemons (3/4 to 1 cup)8 tblspns extra virgin olive oil
Directions
Combine the wheat bulgur, quinoa, water, and salt and let sit for 30 minutes to an hour in a large bowl.

Meanwhile, chop the parlsey, green onion, garlic and mint. Dice the tomatoes, and cucumber. Place all in another large bowl. Zest one of your lemons and squeeze all three into the bowl. Add the olive oil.

When the water is absorbed by the bulgur, add the bulgur to your veggies. Mix and serve. This is best chilled for an hour or so. However, I make this and eat on it for up to 5 days with no problems! Enjoy!
