Strawberry Banana Bread

Ingredients
3/ 4 Cup Sugar1 Cup Splenda2 Cups Flour 1 Cup Whole Wheat Flour1 Tsp Baking Soda1/2 Tsp Cinnamon1/2 Tsp Salt1/4 Tsp Nutmeg1 1/2 Tsp Vanilla1/4 Cup Canola Oil3/4 Cup Cinnamon Applesauce4 Eggs3 Small-Medium Bananas Mashed (About 1-1 1/2 Cups)3/4 Cup Whole Strawberries (Fresh or Frozen)1 1/2 Cups Chopped Strawberries
Directions
This makes 2 loaves with 12 servings per loaf. If you only have one pan, you can cut the recipe in half, or put one half of the batter covered in the refrigerator until the first loaf is done.

~ Preheat oven to 350 and grease bread pan(s).
~ Mix flour ,baking soda, salt, nutmeg and cinnamon in medium mixing bowl and set aside.
~ In blender, blend bananas and the whole strawberries (3/4 Cup) until smooth and well combined. Set aside.
~ In large mixing bowl, beat eggs, sugars, vanilla, oil and applesauce until mixed well. Pour in banana mixture and mix until combined.
~ Add flour mixture and mix for about 1-2 minutes, until mixed well.
~ By hand stir in chopped strawberries.
~ Bake for 70-80 minutes or until a toothpick inserted in the center comes out clean.
~ This tastes really great after storing it wrapped in foil in the refrigerator. Enjoy!
