4 oz. Beef Mixture (recipe below)1 1/2 8" flour tortilla1/2 c. lettuce, shredded2 tbsp. tomato, chopped2-3 tbsp. salsa1 tbsp. low-fat sour creamBeef Mixture Recipe2 lbs. beef1/4 c. water3 tbsp. red wine vinegar1 1/2 c. regular-strength chicken broth2 tbsp. chili powder1 tsp. ground cumin
To make shredded beef -
Trim and discard all visible fat from 2 pounds of beef and place in 5-6 quart pan with 1/4 c. water. Cover and cook over medium heat for 30 minutes. Uncover and cook until liquid evaporates and meat is well browned. In a bowl, combine 3 tbsp. red wine vinegar, 1 1/2 c. regular strength chicken broth, 2 tbsp. chili powder, 1 tsp. ground cumin. Mix well and pour over meat. Continue cooking over medium heat until meat is tender and pulls apart easily (about two hours). Let meat cool, then shred with two forks and mix with pan juices.
