Summer Zucchini Bites

2 cups grated zucchini2 eggs, lightly beaten1/2 cup onion, finely chopped1/2 cup cheddar cheese, shredded1/2 cup bread crumbs1/4 cup fresh parsley, finely minced
1. Preheat oven to 400F. Butter a mini-muffin tin, set aside.
2. In a large bowl, add the two eggs and beat lightly with a whisk. Add zucchini, onion, cheddar, bread crumbs and parsley. Stir to combine well.
3. Fill each muffin tin up to the top.
4. Bake for 15-18 minutes or until the top is browned and set.
Serving Size: Makes 6 4-bite servings

It's important to note in the original recipe that it's MINI muffins, so they are more like appetizers or side dishes. I put it all into a regular muffin tin, so a larger side dish would be 2 muffins. Find original recipe here: http://www.thenaptimechef.com/2010/07/summ
