Tofu Fried Rice

Ingredients
1/2 c. low-fat tofu1 tsp. safflower oil3/4 c. mixed vegetables (carrots, onions, red pepper, broccoli)soy sauce, to tastepepper, to taste2/3 c. cooked brown rice1 c. green salad1 tbsp. non-fat salad dressing
Directions
Heat oil in heavy skillet or wok. Brown tofu. Add vegetables till tender. Add cooked brown rice and season to taste with soy sauce and pepper. Serve with green salad and non-fat salad dressing.
