MM's Tamale Casserole

Ingredients
2 - 8 oz cans of tomato sauce1 cup frozen whole kernal corn1/2 cup chopped black olives1 Tblsp minced garlic1 tsp salt5 tsp chili powder1 tsp pepper1 pound very lean ground beef 1 cup chopped onion1 cup chopped green pepper2 cup cold water3/4 polenta or corn meal1/2 tsp salt1 tbsp olive oil
Directions
Saute meat and veggies in Pam until cooked.
Add tomato sauce, corn, olives, garlic, 1 tsp salt, chili powder and pepper
Dump into an oblong baking dish and set aside.
Stir cornmeal and 1/2 tsp salt in cold water in a sauce pan.
Cook on med-high stirring constantly til thick. Add olive oil & mix well until thick.

Poor cornmeal mixture over beef mixture to cover completely.

Bake at 375 degree oven for about 40 min.

Top with 4 slices of Kraft Free cheese and 1 cup lofat shredded cheddar cheese.

Bake 10 minutes to melt cheese.

Makes about 8 servings.
